  • Egg whites - 3

  1. Whisk the egg whites with half of the cinnamon in a shallow bowl.
  2. Dip the bread into the egg-white mixture, turning once so both sides are coated.
  3. Heat the olive oil in a non-stick frying pan over a medium heat.
  4. Cook the bread for 2–3 minutes on each side until lightly golden and cooked through.
  5. Add the sliced apple to the pan and cook for 2–3 minutes until just softened.
  6. Serve the French toast topped with the warm apple, remaining cinnamon and maple syrup.
