  • Olive oil - Β½ tbsp
  • Red onion - ΒΌ
  • Lean turkey mince - 75 g
  • Garlic - Β½ clove
  • Red chilli - Β½
  • Carrot - 50 g
  • Low-salt soy sauce - Β½ tbsp
  • Fresh coriander - handful
  • Fresh mint - handful
  • Lime juice - 1 lime
  • Chickpeas, drained - 25 g
  • Cumin seeds - Β½ tsp
  • White Tortilla Wraps - 1
  • Spring onions - 3
  • Shredded lettuce - 35 g

  1. Heat half the oil in a frying pan over a medium heat and fry the onion until soft.
  2. Add the turkey, garlic and chilli and cook for about 10 minutes, until the turkey is cooked through.
  3. Add the carrot and cook for a further 5 minutes. Drain away any excess liquid and remove from the heat.
  4. Stir in the soy sauce, coriander, mint and lime juice and set aside briefly for the flavours to develop.
  5. Heat the remaining oil in a separate pan over a high heat. Add the chickpeas and cumin seeds and cook until crispy, keeping them moving so they do not burn.
  6. Warm the tortilla, then fill with the turkey mixture. Top with the spring onions, crispy chickpeas and lettuce.
  7. Seal and roll up the wrap and serve.
