
Beef Chilli with Rice
A mild homemade beef chilli served with basmati rice for a filling, familiar lunch.
Ingredients
- •90 g Lean beef mince (5% fat)
- •65 g Dry basmati rice
- •¼ Onion, diced
- •¼ Red pepper, diced
- •80 g Passata
- •1 tsp Tomato purée
- •½ tsp Mild chilli seasoning
- •½ tsp Olive oil
- •To taste Freshly ground black pepper

Frying pan, saucepan, wooden spoon
Method
- 1Bring a saucepan of water to the boil and cook the basmati rice according to the packet instructions.
- 2While the rice cooks, heat the olive oil in a frying pan over a medium heat.
- 3Add the beef mince and onion and cook for 5–6 minutes, breaking up the mince until browned.
- 4Add the red pepper and cook for 2 minutes.
- 5Stir in the tomato purée and chilli seasoning and cook for 1 minute.
- 6Add the passata and simmer for 12–15 minutes until the chilli has thickened and the beef is cooked through.
- 7Drain the rice.
- 8Serve the chilli over the rice and finish with black pepper.
