🥘 Ingredients

  • Lean beef mince (5% fat) - 90 g
  • Dry basmati rice - 65 g
  • Onion, diced - ¼
  • Red pepper, diced - ¼
  • Passata - 80 g
  • Tomato purée - 1 tsp
  • Mild chilli seasoning - ½ tsp
  • Olive oil - ½ tsp
  • Freshly ground black pepper - To taste

👨‍🍳 Method

  1. Bring a saucepan of water to the boil and cook the basmati rice according to the packet instructions.
  2. While the rice cooks, heat the olive oil in a frying pan over a medium heat.
  3. Add the beef mince and onion and cook for 5–6 minutes, breaking up the mince until browned.
  4. Add the red pepper and cook for 2 minutes.
  5. Stir in the tomato purée and chilli seasoning and cook for 1 minute.
  6. Add the passata and simmer for 12–15 minutes until the chilli has thickened and the beef is cooked through.
  7. Drain the rice.
  8. Serve the chilli over the rice and finish with black pepper.
