🥘 Ingredients

  • Lean beef mince - 125 g
  • Couscous - 70 g
  • Red pepper, sliced - ¼
  • Courgette, sliced - ¼
  • Onion, finely chopped - ¼
  • Olive oil - ¾ tbsp
  • Ground cumin - ¼ tsp
  • Paprika - ¼ tsp
  • Dried oregano - ¼ tsp
  • Garlic granules - ⅛ tsp
  • Lemon juice - ⅛ lemon
  • Fresh parsley - handful
  • Black pepper - To taste
  • No added salt - As required

👨‍🍳 Method

  1. Put the beef mince into a large bowl and add half the onion, cumin, paprika, oregano, garlic granules and black pepper.
  2. Mix thoroughly, then shape the mixture into about 12 small kofta.
  3. Put the couscous into a large bowl and pour over 70ml boiling water. Cover and leave for 5 minutes.
  4. Fluff the couscous with a fork and stir through ¼ tbsp olive oil, the lemon juice and half the fresh parsley.
  5. Heat ¼ tbsp olive oil in a large frying pan over a medium heat.
  6. Add the kofta and cook for 10–12 minutes, turning regularly, until browned and completely cooked through.
  7. Remove the kofta and keep warm.
  8. Add the remaining olive oil, onion, red pepper and courgette to the pan. Cook for 5–6 minutes until softened.
  9. Serve the kofta with the couscous and vegetables, finished with the remaining fresh parsley.
