
Beef Kofta with Couscous
Homemade beef kofta seasoned with mild herbs and spices, served with fluffy couscous and fresh vegetables.
Ingredients
- •125 g Lean beef mince
- •70 g Couscous
- •¼ Red pepper, sliced
- •¼ Courgette, sliced
- •¼ Onion, finely chopped
- •¾ tbsp Olive oil
- •¼ tsp Ground cumin
- •¼ tsp Paprika
- •¼ tsp Dried oregano
- •⅛ tsp Garlic granules
- •⅛ lemon Lemon juice
- •handful Fresh parsley
- •To taste Black pepper
- •As required No added salt

Method
- 1Put the beef mince into a large bowl and add half the onion, cumin, paprika, oregano, garlic granules and black pepper.
- 2Mix thoroughly, then shape the mixture into about 12 small kofta.
- 3Put the couscous into a large bowl and pour over 70ml boiling water. Cover and leave for 5 minutes.
- 4Fluff the couscous with a fork and stir through ¼ tbsp olive oil, the lemon juice and half the fresh parsley.
- 5Heat ¼ tbsp olive oil in a large frying pan over a medium heat.
- 6Add the kofta and cook for 10–12 minutes, turning regularly, until browned and completely cooked through.
- 7Remove the kofta and keep warm.
- 8Add the remaining olive oil, onion, red pepper and courgette to the pan. Cook for 5–6 minutes until softened.
- 9Serve the kofta with the couscous and vegetables, finished with the remaining fresh parsley.
