  • Dried pasta - 70 g
  • Cooked chicken breast, sliced - 100 g
  • Red pepper, finely diced - ΒΌ
  • Lettuce leaf, shredded - 2 leaves
  • Mayonnaise - 1 tbsp
  • Lemon juice - 1 tsp
  • Dried mixed herbs - ΒΌ tsp
  • Freshly ground black pepper - To taste

  1. Bring a saucepan of water to the boil and cook the pasta according to the packet instructions.
  2. Drain the pasta thoroughly and rinse briefly under cold water to cool it.
  3. Place the cooled pasta in a bowl and stir through the mayonnaise, lemon juice and dried herbs.
  4. Add the sliced chicken, red pepper and shredded lettuce.
  5. Toss gently until everything is evenly combined.
  6. Season with black pepper and serve immediately or chill until needed.
