
Chicken Tikka Sandwich
A mild chicken tikka sandwich with crisp lettuce and a light yoghurt dressing, using familiar ingredients in a British lunch format.
Ingredients
- β’2 slices White bread, phosphate-additive-free
- β’100 g Chicken breast, diced
- β’1 tbsp Plain natural yoghurt
- β’Β½ tsp Mild curry powder
- β’ΒΌ Red pepper, finely sliced
- β’2 leaves Lettuce leaf
- β’Β½ tsp Olive oil
- β’To taste Freshly ground black pepper

Frying pan, bowl, knife, chopping board
Method
- 1Mix the yoghurt and curry powder in a bowl.
- 2Add the diced chicken and coat evenly.
- 3Heat the olive oil in a frying pan over a medium heat.
- 4Cook the chicken for 7β8 minutes, turning regularly, until browned and cooked through.
- 5Allow the chicken to cool slightly.
- 6Spread the remaining yoghurt mixture over the bread.
- 7Add the lettuce, red pepper and cooked chicken.
- 8Top with the second slice of bread, cut in half and serve.
