
Cod with Couscous & Vegetables
A lighter Mediterranean-style cod dish with fluffy couscous, peppers and courgette, finished with lemon and herbs.
Ingredients
- β’170 g Cod fillets
- β’75 g Couscous
- β’ΒΌ Red pepper, sliced
- β’ΒΌ Courgette, sliced
- β’ΒΌ Onion, sliced
- β’ΒΎ tbsp Olive oil
- β’β lemon Lemon juice
- β’ΒΌ tsp Dried oregano
- β’ΒΌ tsp Dried parsley
- β’β tsp Garlic granules
- β’25 ml Water
- β’To taste Black pepper
- β’handful Fresh parsley
- β’As required No added salt

Large frying pan, large bowl, measuring jug, chopping board, knife
Method
- 1Put the couscous into a large bowl and pour over 75ml boiling water. Cover and leave for 5 minutes.
- 2Fluff the couscous with a fork and stir through ΒΌ tbsp olive oil, lemon juice and the dried herbs.
- 3Heat ΒΌ tbsp olive oil in a large frying pan.
- 4Add the onion, pepper and courgette and cook for 5β6 minutes until softened.
- 5Remove the vegetables and keep warm.
- 6Add the remaining oil to the pan and season the cod with black pepper, garlic granules and oregano.
- 7Cook the cod for 4β5 minutes on each side until completely cooked through.
- 8Return the vegetables to the pan and add 25ml water.
- 9Simmer gently for 2 minutes to bring everything together.
- 10Serve the cod with the couscous and vegetables, finished with fresh parsley.
