
Egg & Pepper Breakfast Bagel
A warm toasted bagel filled with softly scrambled egg, sweet red pepper and crisp lettuce.
Ingredients
- β’1 Plain white bagel, phosphate-additive-free
- β’3 Egg whites
- β’ΒΌ Red pepper, finely diced
- β’2 leaves Lettuce leaf
- β’ΒΌ tsp Olive oil
- β’To taste Freshly ground black pepper

Non-stick frying pan, toaster, bowl, spatula
Method
- 1Toast the bagel halves until lightly golden.
- 2Heat the olive oil in a non-stick frying pan over a medium heat.
- 3Add the diced red pepper and cook for 2β3 minutes until slightly softened.
- 4Whisk the egg whites with black pepper and pour them into the pan.
- 5Stir gently until the egg whites are softly scrambled and cooked through.
- 6Place the lettuce on the bottom half of the bagel.
- 7Spoon the scrambled egg and pepper mixture over the lettuce.
- 8Top with the other half of the bagel and serve immediately.
