  • Egg whites - 3
  • Red pepper, finely diced - ΒΌ
  • Lettuce leaf - 2 leaves

  • Freshly ground black pepper - To taste

  1. Toast the bagel halves until lightly golden.
  2. Heat the olive oil in a non-stick frying pan over a medium heat.
  3. Add the diced red pepper and cook for 2–3 minutes until slightly softened.

  5. Stir gently until the egg whites are softly scrambled and cooked through.
  6. Place the lettuce on the bottom half of the bagel.
  7. Spoon the scrambled egg and pepper mixture over the lettuce.
  8. Top with the other half of the bagel and serve immediately.
