
Honey Garlic Chicken with Rice
Tender chicken cooked in a simple honey and garlic glaze, served with white rice and crisp vegetables.
Ingredients
- •140 g Chicken breast, skinless
- •65 g Dry white basmati rice
- •¼ Red pepper, sliced
- •37.5 g Green beans, trimmed
- •¼ Onion, thinly sliced
- •¼ tbsp Honey
- •¼ tbsp Olive oil
- •½ clove Garlic, crushed
- •¼ tbsp Lemon juice
- •¼ tsp Cornflour
- •25 ml Water
- •To taste Black pepper
- •As required No added salt

Method
- 1Cook the basmati rice according to the packet instructions.
- 2Mix the honey, lemon juice, cornflour and 25ml water in a small jug.
- 3Heat the olive oil in a large frying pan over a medium heat.
- 4Season the chicken with black pepper and cook for 5–6 minutes per side, until lightly browned and cooked through.
- 5Remove the chicken from the pan and keep warm.
- 6Add the onion and red pepper to the pan and cook for 4–5 minutes until softened.
- 7Add the garlic and cook for 30 seconds.
- 8Pour in the honey mixture and stir until the sauce thickens.
- 9Return the chicken to the pan and turn it in the glaze for 2–3 minutes.
- 10Meanwhile, steam or boil the green beans until tender but still slightly crisp.
- 11Drain the rice and serve with the honey garlic chicken and green beans.
