🥘 Ingredients

  • Floury baking potato - 250 g
  • Lean beef mince (5% fat) - 90 g
  • Onion, finely diced - 2 tbsp
  • Red pepper, finely diced - ¼
  • Passata - 60 g
  • Tomato purée - 1 tsp
  • Mild chilli seasoning - ½ tsp
  • Olive oil - ½ tsp
  • Freshly ground black pepper - To taste

👨‍🍳 Method

  1. Preheat the oven to 200°C (180°C fan).
  2. Prick the potato several times with a fork and place it on a baking tray.
  3. Bake for 45 minutes.
  4. While the potato is baking, heat the olive oil in a frying pan over a medium heat.
  5. Add the beef mince and onion and cook for 5–6 minutes, breaking up the mince until browned.
  6. Add the red pepper and cook for 2 minutes.
  7. Stir in the tomato purée and chilli seasoning and cook for 1 minute.
  8. Add the passata, bring to a gentle simmer and cook for 10–12 minutes until the chilli has thickened and the beef is cooked through.
  9. Remove the potato from the oven and cut a cross into the top.
  10. Open the potato, spoon over the beef chilli and season with black pepper.
  11. Serve immediately.
