
Jacket Potato with Beef Chilli
A proper British jacket potato topped with a mild homemade beef chilli for a hearty British lunch.
Ingredients
- •250 g Floury baking potato
- •90 g Lean beef mince (5% fat)
- •2 tbsp Onion, finely diced
- •¼ Red pepper, finely diced
- •60 g Passata
- •1 tsp Tomato purée
- •½ tsp Mild chilli seasoning
- •½ tsp Olive oil
- •To taste Freshly ground black pepper
Equipment
Fan oven, baking tray, frying pan, wooden spoon
Method
- 1Preheat the oven to 200°C (180°C fan).
- 2Prick the potato several times with a fork and place it on a baking tray.
- 3Bake for 45 minutes.
- 4While the potato is baking, heat the olive oil in a frying pan over a medium heat.
- 5Add the beef mince and onion and cook for 5–6 minutes, breaking up the mince until browned.
- 6Add the red pepper and cook for 2 minutes.
- 7Stir in the tomato purée and chilli seasoning and cook for 1 minute.
- 8Add the passata, bring to a gentle simmer and cook for 10–12 minutes until the chilli has thickened and the beef is cooked through.
- 9Remove the potato from the oven and cut a cross into the top.
- 10Open the potato, spoon over the beef chilli and season with black pepper.
- 11Serve immediately.
