  1. Crack the eggs into a bowl and whisk lightly with black pepper.
  2. Melt the butter in a non-stick frying pan over a low to medium heat.
  3. Pour in the eggs and leave for 20–30 seconds until they begin to set.
  4. Gently draw the cooked egg from the edges towards the centre, allowing uncooked egg to run underneath.
  5. When almost set, fold the omelette in half.
  6. Cook for another 30 seconds and serve immediately.
