🥘 Ingredients

  • Lean pork loin steaks - 150 g
  • Potatoes - 175 g
  • Eating apples - ½
  • Green beans - 12.5 g
  • Onion, sliced - ¼
  • Olive oil - ¾ tbsp
  • Dried sage - ¼ tsp
  • Dried parsley - ¼ tsp
  • Lemon juice - ¼ tbsp
  • Black pepper - To taste
  • No added salt - As required

👨‍🍳 Method

  1. Peel and cut the potatoes into even chunks. Boil for 12–15 minutes until tender.
  2. Drain and allow them to steam dry for a few minutes.
  3. Heat ¼ tbsp olive oil in a large frying pan. Season the pork with black pepper and sage and cook for 4–5 minutes per side, until cooked through. Remove and keep warm.
  4. Add the remaining oil and the sliced onion to the pan. Cook for 3–4 minutes until softened.
  5. Core and slice the apples, then add them to the pan with the lemon juice. Cook for 3–4 minutes until just softened but still holding their shape.
  6. Meanwhile, steam or boil the green beans for 5–6 minutes.
  7. Return the pork to the pan for 1–2 minutes to warm through.
  8. Toss the potatoes with dried parsley and serve with the pork, apple and green beans.
