
Pork Stir-Fry with Rice
A quick pork stir-fry with colourful vegetables and fluffy white rice, made without soy sauce.
Ingredients
- β’125 g Lean pork loin, cut into thin strips
- β’70 g Dry white basmati rice
- β’ΒΌ Red pepper, sliced
- β’ΒΌ Courgette, sliced
- β’ΒΌ Onion, sliced
- β’37.5 g Green beans, trimmed
- β’ΒΎ tbsp Olive oil
- β’Β½ clove Garlic, crushed
- β’ΒΌ tsp Ground ginger
- β’ΒΌ tbsp Honey
- β’ΒΌ tbsp Lemon juice
- β’25 ml Water
- β’ΒΌ tsp Cornflour
- β’β tsp Paprika
- β’To taste Black pepper
- β’As required No added salt

Large frying pan or wok, saucepan with lid, measuring jug, chopping board, knife
Method
- 1Cook the basmati rice according to the packet instructions.
- 2Mix the water, honey, lemon juice and cornflour in a small jug.
- 3Heat β tbsp olive oil in a large frying pan or wok over a high heat.
- 4Add the pork and stir-fry for 5β6 minutes until browned and cooked through. Remove and keep warm.
- 5Add the remaining oil, onion, pepper, courgette and green beans to the pan.
- 6Stir-fry the vegetables for 5β6 minutes until cooked but still slightly crisp.
- 7Add the garlic, ginger and paprika and cook for 30 seconds.
- 8Return the pork to the pan.
- 9Pour in the honey and lemon mixture and stir for 2β3 minutes until the sauce lightly thickens.
- 10Serve immediately with the basmati rice.
