
Salmon with Lemon & Herbs
Oven-baked salmon fillet served with roasted potatoes and vegetables, finished with lemon and herbs for a light family dinner.
Ingredients
- •150 g Salmon fillet
- •200 g Floury potatoes, cut into bite-sized chunks
- •½ Red pepper, cut into chunks
- •¼ Red onion, cut into wedges
- •1½ tsp Olive oil
- •¼ Lemon juice
- •¼ Lemon zest
- •½ tsp Dried mixed herbs
- •To taste Freshly ground black pepper

Fan oven, large roasting tray
Method
- 1Preheat the oven to 200°C (180°C fan).
- 2Place the potatoes into a large roasting tray, drizzle with half of the olive oil and toss to coat evenly. Roast for 15 minutes.
- 3While the potatoes are roasting, place the salmon into a bowl. Add the remaining olive oil, lemon juice, lemon zest, dried mixed herbs and freshly ground black pepper. Coat the salmon evenly.
- 4Remove the roasting tray from the oven and add the red pepper and red onion. Place the salmon on top or alongside the vegetables.
- 5Return the tray to the oven and roast for 18–20 minutes, until the salmon flakes easily with a fork and the potatoes are golden.
- 6Serve immediately.
