
Sausage & Egg Breakfast Muffin
A toasted breakfast muffin filled with a light pork sausage, egg and crisp lettuce.
Ingredients
- β’1 Light pork breakfast sausage
- β’1 Egg
- β’1 Plain white breakfast muffin, phosphate-additive-free
- β’2 leaves Lettuce leaf
- β’5 g Butter
- β’To taste Freshly ground black pepper
Equipment
Non-stick frying pan, toaster, spatula
Method
- 1Remove the sausage meat from its casing and shape it into a flat patty roughly the same diameter as the breakfast muffin.
- 2Cook the sausage patty in a non-stick frying pan over a medium heat until thoroughly cooked and browned on both sides.
- 3Remove the sausage patty and keep warm.
- 4Toast the breakfast muffin and spread lightly with butter.
- 5Crack the egg into the same pan and cook until the white is set and the yolk is cooked to your preference.
- 6Place the lettuce on the bottom half of the muffin.
- 7Add the sausage and egg.
- 8Season with black pepper and top with the other half of the muffin.
- 9Serve immediately.
