
Sausage & Tomato Pasta
A simple sausage and tomato pasta with peppers and courgette, with plenty of flavour without salty sauces.
Ingredients
- β’2 Good-quality pork sausages
- β’75 g Dried penne pasta
- β’ΒΌ Red pepper, diced
- β’ΒΌ Onion, finely sliced
- β’ΒΌ Courgette, diced
- β’12.5 g Chopped tomatoes
- β’Β½ tbsp Olive oil
- β’Β½ clove Garlic, crushed
- β’ΒΌ tsp Dried oregano
- β’ΒΌ tsp Dried basil
- β’ΒΌ tsp Paprika
- β’25 ml Water
- β’To taste Black pepper
- β’handful Fresh parsley
- β’As required No added salt

Large frying pan, large saucepan, colander, chopping board, knife
Method
- 1Remove the skins from the sausages and break the meat into small pieces.
- 2Cook the pasta according to the packet instructions until just tender. Drain and set aside.
- 3Heat ΒΌ tbsp olive oil in a large frying pan.
- 4Add the sausage meat and cook for 6β8 minutes, breaking it up as it cooks, until browned and cooked through.
- 5Remove the sausage from the pan and set aside.
- 6Add the remaining olive oil, onion, pepper and courgette and cook for 5β6 minutes.
- 7Add the garlic, oregano, basil and paprika and cook for 30 seconds.
- 8Stir in the chopped tomatoes and water and simmer for 5 minutes.
- 9Return the sausage meat to the pan and simmer for another 3β4 minutes.
- 10Stir through the cooked pasta and heat for 1β2 minutes.
- 11Season with black pepper and finish with fresh parsley.
