Soft scrambled egg whites with sweet red pepper and spring onion served over crisp toast.
Ingredients
- β’4 Egg whites
- β’2 slices White bread, phosphate-additive-free
- β’Β½ Red pepper, finely diced
- β’1 Spring onion, finely sliced
- β’ΒΌ tsp Olive oil
- β’To taste Freshly ground black pepper

Method
- 1Toast the bread.
- 2Heat the olive oil in a non-stick frying pan over a medium heat.
- 3Add the red pepper and spring onion and cook for 3β4 minutes until softened.
- 4Whisk the egg whites with black pepper and pour into the pan.
- 5Stir gently until softly scrambled and cooked through.
- 6Serve immediately on the toast.
